Soak the hibiscus flowers in 1 L of water for an hour in order to infuse it. Filter the water.
In a large mason jar, add the infused hibiscus water and add maple syrup, lemon juice and chia seeds. Shake vigorously every 5 minutes so that the chia does not stick to the bottom of the jar. Let sit for 30 minutes in the fridge. Serve cold.
