Almond and Berries Granola Bar

How It's Made


  • 1 2/3 cups quick oats
  • 1/2 cup organic spelt flour
  • 1 cup Organic Raw European Almonds
  • 3/4 cup Organic Cranberries, Sweetened with Apple Juice
  • 1/2 cup Organic Blueberries, Sweetened with Apple Juice
  • 1 tbsp Organic Fair Trade Ground Ceylon True Cinnamon
  • 1 tsp sea salt
  • 3/4 cup Organic Blanched Almond Butter
  • 3/4 cup Organic Maple Syrup
  • 3 tbsp water
  • 6 tbsp coconut oil and a little more for greasing the pan


  1. Preheat oven to 350°F. Line a 9x 13 brownie pan with parchment paper and lightly grease with coconut oil
  2. Use a food processor to finely chop the almonds and cranberries. The bars hold together better when the pieces are smaller.
  3. n a large bowl, combine all dry ingredients including the dried fruits.
  4. In a smaller bowl, combine wet ingredients with a hand mixer.
  5. Pour the wet ingredients into the dry ingredients. Stir well to make sure everything is evenly combined.
  6. Put the dough into a parchment paper covered or coconut oil greased pan. Use plastic wrap or parchment paper to firmly press the mixture down evenly into the pan.
  7. Bake for 25 minutes until the edges become golden brown.
  8. Remove from the oven and allow the bars to cool in the pan for 20 minutes. Transfer on a cooling rack.
  9. Cut granola bars the size you desired. Store in an airtight container.
