Chocolate orange chia pudding

We can never get enough chia pudding! Whether it's a healthy version or a more decadent one, chia pudding makes a great breakfast, dessert, or afternoon snack. Kids love it in their lunch boxes, just serve in a small mason jar! This rich and creamy version, with coconut milk and cacao powder is made for the chocolate lover in your life. It's got a summery twist from orange zest (chocolate + orange = a match made in heaven), but you can also make it a little more exotic by adding spices like cinnamon or cardamom. If you're preparing this chia pudding in advance, it'll keep for 2 to 3 days in the refrigerator in a tightly sealed container. If you find the end result too thick, add a little extra coconut or almond milk to thin it out for a smooth, creamy texture.

How it's made

  1. Pour the almond milk in a bowl. Add the agave syrup and cacao powder and whisk to combine. Add the orange juice and zest.
  2. Pour the mix into a 500mL mason jar and add the chia seeds. Close the jar and shake vigorously so that the chia seeds don't stick together.
  3. Let the mixture sit for about 30 minutes, until it's reached the consistency of tapioca pudding. Shake occasionally if needed.
