How It's Made

Ingredients

  • 1 cup and 1 tablespoon spelt flour or all-purpose gluten-free flour
  • 1/2 cup of almond flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground chia
  • 1/3 cup of melted coconut oil
  • 1 tablespoon of homemade almond milk
  • 1/3 cup of maple syrup
  • 2 teaspoons of vanilla extract
  • 1/2 cup of Prana Kilimanjaro Deluxe Chocolate Mix
  • 1/2 cup of 70% dark chocolate

Directions

  1. Preheat the oven to 350°F. Cover a baking sheet with parchment paper.
  2. In a medium bowl, mix the spelt flour, almond flour, salt, baking soda, and ground chia. Set aside.
  3. In another bowl, mix coconut oil, almond milk, maple syrup, and vanilla.
  4. Melt the dark chocolate in a bain marie (double-boiler).
  5. Gradually blend the dry ingredients with the wet ingredients, mixing well with a spatula. Add the Kilimanjaro mix and the melted chocolate, and mix until blended.
  6. Use a tablespoon to make balls of dough, and drop them onto the prepared baking sheet, making sure to leave about 1 1/2" in between each cookie.
  7. Bake for about 12 minutes. Transfer the baked cookies to a cooling rack until they're cool to the touch.
