Cashew "Cheese" with Fine Herbs

This cashew cheese recipe is super easy and great for adults and kids alike! The fine fresh herbs give a freshness to the taste, and we encourage you to switch it up to match your desires! Garlic, green onion, hot spices are all good alternatives that will keep this recipe fresh every time you use it!


How It's Made


  • 1 cup of
  • 2 tablespoons of nutritional yeast
  • 2 tablespoons of lemon juice
  • 2 tablespoons of water
  • 1 teaspoon of apple cider vinegar
  • 1 clove of garlic
  • 1/2 teaspoon of
  • Fresh ground black pepper (to taste)
  • 1/2 teaspoon of fresh chopped basil
  • 1/2 teaspoon of fresh chopped oregano
  • 1/4 teaspoon of fresh chopped thyme


  1. Soak the cashews for 30 minutes, then rinse and drain them.
  2. Blend together the nuts with the nutritional yeast, lemon juice, water, vinegar, garlic and salt until smooth and creamy, about 2-3 minutes.
  3. Transfer mixture into a bowl and mix in the finely chopped fresh herbs.
  4. Wrap the mixture in a cheese cloth and squeeze tight. Let sit overnight in the fridge, where it will slowly harden. You can also pack the mixture very tightly into a container if you don't have any cheese cloth.
  5. Remove from cloth and serve with fresh bread, crackers and raisins!
