Cacao and Almond Energy Bar

Mesquite powder has a semi-sweet taste similar to a blend of cinnamon, chocolate and coffee, and is an excellent source of fibre. Just 2 tablespoons a day is enough to keep you full for hours. Add it to your smoothies, cakes and other baked goods. Or, to this recipe for Cacao and Almond Energy Bars!

How It's Made


  • 12 Medjool Dates
  • 1 cup of European almonds
  • 1/2 cup of cashews
  • 1/4 cup of Thompson Raisins
  • 1/8 cup of Goji berries
  • 1 tablespoon of Ground black Chia
  • 3 c. à soupe cacao powder
  • 1/2 tablespoon of Mesquite Powder
  • 1/2 tablespoon of Maca Powder
  • A pinch of sea salt
  • 1/2 tasse puffed rice


  1. Remove the pits and cut the Medjool dates into large pieces. In a food processor blend them until they become a paste. Set aside.
  2. In a small, dry pan, sauté the almonds and cashews for a few minutes until they are lightly golden. Make sure to not burn them. Chop into large pieces and set aside until cool.
  3. Cover a 6.5 x 6.5" square mold with parchment paper, making sure to extend over the sides.
  4. Mix the date paste, raisins, goji berries, nuts, puffed rice, ground chia, cacao, mesquite, maca and salt in a large bowl using your hands. Be sure to moisten your hands before mixing.
  5. Firmly press the dough into the mold and cover with plastic wrap. Place in refrigerator for 2 hours (or freezer for 30 minutes).
  6. After cooling, remove from the mold and cut into 8 bars. Keep the bars in the refrigerator or freezer in an air-tight container or bag.
