Buckwheat Granola with Pecans, Chocolate and Coconut
A rich and chocolaty granola recipe to kick off a productive day!
How It's Made
3 cups oatmeal
1 cup buckwheat
1 1/2 cups pecans
1/4 cup chia seeds
1/2 teaspoon sea salt
1/3 cup coconut oil
1/3 cup maple syrup
1/2 cup cacao powder
1/4 cup coconut palm sugar
1/2 tablespoon ground cinnamon
Preheat the oven to 350°F.
In a bowl, mix the oatmeal, buckwheat, chia seeds, coconut palm sugar, coarsely chopped pecans and ground cinnamon.
In a small pot on medium heat, melt the coconut oil and add the maple syrup, cacao powder and salt. Mix until well combined.
Add the dry ingredients into the pot and stir until evenly coated.
Line a baking sheet with parchment paper and spread evenly the granola mixture, making sure to keep it compact and thick.
Cook for 15 to 20 minutes at 350°F. Remove the baking sheet from the oven and break the granola in big chunks. Bake for another 5-10 minutes while stirring occasionally.
Remove the baking sheet from the oven and let cool. The granola will keep fresh in an sealed container for a week.
