A classic blueberry muffin recipe with a twist! These muffins are perfect for breakfast or for a mid-afternoon snack!
How It's Made
4 tablespoons of coconut oil
1 tablespoon of Ground black Chia
3 tablespoons of water
1 1/2 cup of spelt flour
1/3 cup of oatmeal
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of Salt
1/3 cup of apple sauce
1 cup of almond milk
1/2 cup of Cane Sugar
1 tablespoon of vanilla essence
1 cup of fresh blueberries
1/4 cup of Thompson Raisins
Zest of one orange
Preheat the oven to 350ºF.
Place muffin liners in the muffin molds.
Melt the coconut oil in a bain marie.
In a small bowl, mix together the ground chia seeds and water. Let sit for 10 to 15 minutes.
In a mixing bowl, mix together all the dry ingredients except the sugar.
In another mixing bowl, mix together the applesauce, almond milk, sugar, coconut oil, the ground chia mixture and the vanilla.
Slowly stir the dry ingredients into the wet ones. Add blueberries, raisins and orange zest.
Pour about 1/3 cup of mixture in each muffin mold. Sprinkle with oatmeal and sugar (optional) on top.
Bake for 25 minutes, then let sit on a cooling rack.
