Blueberry and Coconut Chia Pudding

How It's Made

Ingredients

  • 1 cup of coconut milk
  • 2 tablespoons of chia seeds
  • 2 tablespoons of maple syrup
  • 1/2 cup of fresh or frozen blueberries
  • 1 tablespoon of maple syrup
  • 1 teaspoon of vanilla essence
  • Some coconut strips

Directions

  1. In a mason jar, add together the coconut milk, chia seeds and maple syrup. Seal and shake. Let sit for an hour or overnight.
  2. In a food processor on low speed, mix the blueberries, 1 tablespoon maple syrup and vanilla. Gently mix until a nice chunky texture, not smooth.
  3. Spread 1/3 of the chia mixture across your individual servin mason jars or cups. Add 2 tablespoons of fruit mixture, and then top off with the remaining chia. Add another layer of the remaining blueberry mixture. Top with plain coconut strips.
