BBQ Portobello burger with kale, basil, and hemp pesto

Nothing says summer like a burger on the BBQ. And portobello burgers are the way to go if you're looking for something thick, juicy, and filling. They're easy to prepare and don't take long to cook. Served with a quick pesto made of kale, basil, and hemp seeds, they're a real treat!
Hemp has more than a few nutritional benefits, which makes it a no-brainer addition to this summer dish. It's seeds are a source of protein, minerals, vitamins, and fiber, but most importantly, have a high concentration of of omega 3 and 6 fatty acids! We love to sprinkle them in salads, smoothies, or use them to transform this pesto into a nutritious powerhouse!

How It's Made: The Burger

Ingredients

  • 2 portobello mushrooms
  • 2 tablespoons of balsamic vinegar
  • 2 tablespoons of lime juice
  • 2 tablespoons of olive oil
  • Drizzle of
  • ¼ teaspoon of herbes de Provence
  • 1 clove of garlic
  • Sea salt and ground pepper

 

Toppings:

  • 2 burger buns
  • 1 tomato, sliced
  • A few Boston lettuce leafs
  • 1 ripe avocado, sliced

Directions

  1. Mix all the ingredients for the marinade in a bowl. Place the portobello mushroom caps in the marinade and set aside for 30 minutes to 1 hour. 
  2. While the burgers are marinating, prepare the pesto. 
  3. Once the burgers are marinated, grill them on a BBQ or a grill pan for 7 to 8 minutes on each side, until they're tender.

How It's Made: Kale, Basil & Hemp Pesto

Ingredients

  • 3 cups of chopped kale
  • 1 cup of fresh basil
  • 2 cloves of garlic
  • 3/4 cup of
  • 1/4 cup of nutritional yeast
  • 1/2 cup of olive oil
  • 2 tablespoons of lemon juice
  • 1 teaspoon of

Directions

  1. Add the garlic, basil, kale, hemp, lemon juice, salt, and pepper to the bowl of a food processor. Mix, drizzling in olive oil until you've reached the desired consistency.
  2. Season to taste with lemon juice, salt, and pepper.
