Banana French Toast with Homemade Caramel

This French Toast recipe isn't exactly traditional, but it follows it in spirit. The preperation is actually quite simple: dairy-free milk, chia seeds, vanilla and maple syrup! The trick here is to let the mixture sit for a few minutes so the Chia can do it's thing. You'll see we've also added a pureed banana to the mix because we wanted it to be extra tasty (you can leave it out if you want). You can make this recipe with nearly any bread, but we suggest a nice seedy one for the texture and nutrients. Top this dish with our homemade caramel recipe and you have yourself a breakfast fit for the holidays!

How It's Made


  • 1 cup of almond milk
  • 1 tablespoon of ground chia
  • 1 crushed banana
  • 1/2 teaspoon of ground vanilla
  • 6 to 8 slices of bread
  • 1 tablespoon of coconut oil
  • 1/2 cup of pecans
  • A few extra slices of banana
  • Caramel Sauce


  1. In a mixing bowl, stir together the milk, chia, crushed banana and vanilla.
  2. Soak each slice of bread in the mixture, making sure to flip the slice so it is well covered.
  3. In a non-stick pan, heat the coconut oil and fry the slices of bread until golden, about 3 to 4 minutes each side.
  4. Serve with chopped pecans, banana slices and homemade caramel sauce.

How It's Made: Caramel Sauce


  • 6 Medjool dates
  • 1 cup of nut milk of your choice
  • 1 teaspoon of coconut oil
  • 2 tablespoons of almond butter
  • A pinch of Sea Salt


  1. Place all ingredients in a food processor and mix until smooth.
  2. Keep in an airtight container in the fridge.
