When it comes to eating healthy, one of the best strategies might be to know each ingredient going into what you eat. And the best way of keeping track is by making your food at home as often as possible, with high-quality ingredients. Of course, when you're busy with school or work, it's not always easy to keep track, and it's not always easy to find time to spend in the kitchen. But then again, who said you had to do it alone? Set aside some time once weekly to prepare a communal meal or snacks with friends or family, that you can then share! Everyone brings one or two ingredients of their choice, whatever they already have at home, and spends the afternoon whipping up something delightful that can be shared immediately afterwards. It's fun, social, cost-effective and satisfying to prepare such great food at home. This granola bar recipe is an excellent place to start. It's simple and easy, and made with just a few ingredients - soft Medjool dates, creamy nut butter, oats, and super-healthy nuts. Try making them in fun shapes with cookie cutters - with a round one, all you need are some chocolate chunks and coconut strips to make a funny happy face for the kids!

Ingredients

  • 1 cup of
  • 1/4 cup of almond butter
  • 1/4 cup of oats (use gluten-free oats if needed)
  • 1 cup of mixed raw nuts and seeds (almonds, walnuts, pecans, sunflower seeds, pumpkin seeds)
  • 1/2 cup of extra toppings, if desired (chocolate chunks, dried fruit, coconut)
  • 1/2 teaspoon of vanilla extract
  • 1 pinch of salt

Directions

  1. Preheat the oven to 350°F. On a baking sheet covered in parchment paper or a silicone mat, roast the nuts and the oats for 10 to 15 minutes. Let cool for a few minutes.
  2. Pit the dates and put them in the bowl of your food processor. Mix for several seconds so that they turn into a paste. Set aside the date paste.
  3. In a small saucepan, heat the nut butter if it has a more firm or hard texture. If it's already soft, skip this step. In the food processor, coarsely chop the nuts, and then mix with the oats, date paste and nut butter.
  4. Transfer to a large mixing bowl and mix with any other ingredients you desire (chocolate chunks, dried fruit, coconut, etc.). Mix well.
  5. On the same baking sheet covered with parchment paper, spread the granola bar mix into an even layer (about 1.5 cm thick). Put the baking sheet in the freezer for about 20 minutes, and cut into the desired shape. Keep in the fridge or freezer in a tightly sealed container.
